Sometimes you just want a cookie. Sometimes you just want a cookie made to your current craving specifications. The time it takes from cookie-craving alert to pulling the cookies out of the oven also has to be minimal. No fuss, no chill time. Almost as if you said, “I need cookies STAT!”, and there they were.
I dealt with this very same situation earlier this week. Sometimes you want a cookie loaded with peanut butter, oats, chocolate chips, and sweetened with maple syrup, and I did. And honestly, I didn’t just want it, I think I needed it. This happens too, right?…
There’s a fella in my household that has a birthday today. And for as much as I have a sweet tooth, he does not. When I say, “Let’s have some ice cream,” he says, “I don’t want any, but I’ll get you some.” Or if I say, “Help me eat these brownies I made,” he’ll say, “How about I just have the tiniest bite.” Really? So not fun….
We just finished our last week of classes, and I’ve decided that no matter how old you are, the anticipation and excitement of summer break never gets old. A full-fledged bonus of working in education is the child-like freedom of summer. So to celebrate, today’s recipe is a two-for-one special, as the double chocolate chip cookies that make up these cookie sandwiches have become one of my favorites all on their own. I first made these cookie sandwiches for our picnic in the park to celebrate Jordan’s birthday and again on Mother’s Day. Not having fresh strawberries on hand initially, I made the strawberry-coconut cream by grinding dried strawberries into a powder. The increased amount of sun this week has made everything feel a bit easier. Daylight savings and Spring seemed to have coordinated their schedules because we couldn’t have asked for a more beautiful introduction to March. It also felt like a good time to take our Christmas wreath with its festive lights down off the front door. I know. I did, though, stop turning the wreath lights on at the close of January. Clearly, you can see where my priorities are not….
