Butternut squash and red pepper soup

This easy Roasted Butternut Squash and Red Pepper Soup recipe requires only 7 main ingredients!  Makes for a creamy and flavorful comforting bowl of soup. Gluten-free + Vegan

INGREDIENTS

STEP 1: Place squash and red bell peppers on baking sheet. Roast for 20 minutes.

STEP 2: In a large saucepan, add the chopped onion, carrot, and celery. Sauté.

STEP 3: Add roasted veggies and simmer.

STEP 4: Use immersion blender and puree half of soup.
