Red Lentils Celery, Onion, Bell Peppers Diced Tomatoes Vegetable Broth Cornmeal Garlic Cajun Seasoning

STEP 1: In a 12-inch oven-proof skillet, add olive oil, cook onions, celery, and bell peppers over medium-high heat.

STEP 2: Stir in diced tomatoes, vegetable broth, dry lentils, and spices. Bring to a boil and then simmer.

STEP 3: Combine cornmeal, arrowroot starch, almond milk, and sugar.

STEP 4: Drop cornbread dough into small rounds on cooked lentils.
