Easy White Bean and Tomato Soup

This White Bean Tomato Soup recipe has a special ingredient: roasted fennel! It makes for an easy pantry meal. Pair it with salad, sandwiches, or enjoy on its own!  Gluten-free, vegan.


Canned Tomatoes Canned White Beans Onion Garlic  Fennel Vegetable Broth Balsamic Vinegar


STEP 1: Roast the fennel.

STEP 2: Saute the vegetables in a saucepan. Add the spices.

STEP 3: Add diced tomatoes with juice and vegetable broth. Bring to a simmer and cook uncovered for 20-25 minutes.

STEP 4: Add white beans and blend half the soup with an immersion blender.
