Step 1: Add organic cane sugar and water to a small saucepan. Bring to a boil and then turn heat to low; stir frequently until dissolved.
Step 2: Remove sugar syrup from the heat and add mint. Steep for 15 minutes, then strain into an airtight jar or container and allow to cool.
Step 3: Add ice cubes to a cocktail shaker followed by the gin, mint simple syrup, and lime juice.
Step 4: Shake then strain into a chilled coupe cocktail glass or Old Fashioned glass. Garnish with mint sprig.
