GLUTEN FREE CRANBERRY ORANGE BREAD

This healthier Gluten Free Cranberry Orange Bread with an orange glaze and walnuts is made with almond and oat flours.  Perfect for the holiday season as breakfast or dessert.

Chia Seeds Orange Juice Cranberries Oat Flour Almond Flour Arrowroot Starch Applesauce Coconut Oil Powdered Sugar Coconut Sugar

INGREDIENTS

STEP 1: In a blender, add chia seeds, hot water, orange juice, applesauce, and coconut oil. Allow to soak, set aside.

STEP 2: In a large bowl, add almond flour, oat flour, arrowroot starch, baking soda, baking powder, salt, and coconut sugar. Whisk to combine.

STEP 3: Fold liquid mixture into the dry mixture. Once evenly combined, fold in diced cranberries and orange zest.

STEP 4: Transfer batter to loaf pan and smooth top with spatula. Bake for 50-55 minutes.

STEP 5: Pour over bread, smoothing with the back of a spoon, if necessary. Sprinkle with nuts.
