Mexican Hot Chocolate Cookies

Sweet and spicy Mexican Hot Chocolate Cookies with gooey marshmallows, rich chocolate, and whole grain oat flour. These spicy chocolate cookies are gluten-free and dairy-free!

Chocolate Chips Coconut Oil  Coconut Sugar Unsweetened Cocoa Powder Eggs Oat Flour Mini Marshmallows Ground Cinnamon Cayenne Pepper Chili Powder

INGREDIENTS

STEP 1: In a medium microwavable bowl, add 1 ½ cups of the chocolate chips and the coconut oil and melt at 30 second intervals.

STEP 2: In a large bowl, beat the coconut sugar and eggs together with an electric mixer. Continue beating and slowly add melted chocolate and vanilla.

STEP 3: Add oat flour, baking powder, salt, cinnamon, chili powder, and cayenne pepper. Fold in remaining chocolate chips and marshmallows.

STEP 4: Chill dough for 30 minutes to an hour. Roll cookie dough into balls and place on baking sheet. Bake for 7-9 minutes.
