STEP 1:
Heat olive oil in a large pot over medium heat. Cook onion and potatoes, until onions become translucent and potatoes start to soften.

Add the garlic, chili seasoning (cumin, chili powder, dried oregano, salt and black pepper). Add green salsa and tomatoes and vegetable broth.

Add quinoa, stir to combine. Bring to a boil.
