Vegan quinoa chili

This Easy Quinoa Chili with Salsa is a delicious one-pot vegetarian meal loaded with white beans, potatoes, quinoa, and salsa verde. Simple ingredients right from your pantry!

STEP 1: Heat olive oil in a large pot over medium heat. Cook onion and potatoes, until onions become translucent and potatoes start to soften.

STEP 2: Add the garlic, chili seasoning (cumin, chili powder, dried oregano, salt and black pepper). Add green salsa and tomatoes and vegetable broth.

STEP 3: Add quinoa, stir to combine. Bring to a boil.

STEP 4: Add beans and simmer until quinoa is tender. Garnish and serve with tortilla chips!
