Double Chocolate Apricot Cookies {Gluten-Free}

Made nutrient packed teff flour, high in calcium, protein, and fiber, these rich and chocolatey cookies have bursts of apricot perfect for dessert or with a cup of tea.

Ingredients

  • ½ cup butter
  • ½ cup maple syrup I prefer Grade B
  • ½ cup organic coconut palm sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • ¾ cup tapioca flour
  • ½ cup teff flour I use Bob's Red Mill Brand
  • ¼ cup cacao powder I use Dagoba brand
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • ½ cup dried unsweetened apricots chopped into small bits
  • 4 ounce bittersweet chocolate bar chopped into ¼ inch squares

Instructions

  • Preheat oven to 350 degrees. Line two cookie sheets with parchment paper.
  • In a large bowl, using an electric mixer, cream the butter, maple syrup, and organic coconut palm sugar together until combined, about 30 to 60 seconds. Over mixing will cause cookies to spread when baking. Mix in the egg and vanilla extract.
  • In a second large bowl, combine tapioca flour, teff flour, cacao powder, salt, and baking soda with whisk.
  • With the electric mixer on the lowest speed setting, gradually add the dry ingredients to the wet until just combined. Cover bowl with plastic wrap and refrigerate 35-45 minutes.
  • Using a small spoon, drop batter onto prepared cookie sheets and bake for 10 to 12 minutes. Let the cookies cool on the cookie sheets on wire racks for 5 minutes, then remove from cookie sheets and allow cookies to cool entirely on wire racks.

Don't have cacao powder? Cocoa powder should work well here, too.
