Healthy Chocolate Granola Bars (Gluten-Free, Vegan)

Healthy Chocolate Granola Bars made with whole grain gluten-free oats, sunflower seeds, quinoa, chocolate chips, and cocoa powder for a healthy granola bar recipe! Gluten-free, vegan, refined sugar-free.

Ingredients

  • Preheat oven to 350 degrees Fahrenheit. Grease a 9x13 pan lightly and line with parchment paper. Parchment paper will yield a cleaner removal. Melt your coconut oil and allow it to cool for 2-3 minutes.
  • In a large bowl, combine oats, almond flour, cocoa powder, cinnamon, salt, ground flax seed, chocolate chips, sunflower seeds, and quinoa. Stir to evenly incorporate ingredients.
  • Make a well in the center of the dry ingredients and pour cooled coconut oil, maple syrup, and vanilla extract, whisking liquid as you pour. Stir until the oat mixture is evenly coated.
  • Transfer mixture to prepared pan and using a a piece of parchment paper, press mixture firmly and evenly down into pan.
  • Bake for 23-25 minutes. Cool on a wire rack. Once completely cool, use a sharp knife to cut into bars. Wrap individually with foil or plastic wrap or store in an airtight container.
