Frozen Blueberry Mojitos

Blueberry and mint combine with white rum and simple syrup to make this refreshingly cool frozen blueberry mojito cocktail.

Ingredients

Simple Syrup

Frozen Mojitos

  • 1 cup frozen blueberries
  • 12 fresh mint leaves
  • ¼ cup simple syrup
  • 4 oz white rum
  • 2 oz fresh lime juice
  • 2 cups ice

Instructions

  • Make the simple syrup: Over low heat, add sugar and water to a small saucepan, stirring occasionally until the sugar has fully dissolved. Remove from heat and set aside to cool completely.
  • Make the mojitos: In a blender, add blueberries, mint leaves, simple syrup, white rum, lime juice, and ice. Blend until smooth. Pour into two glasses and garnish with mint and a slice of lime if desired.

Notes

  • This recipe calls for frozen blueberries, but if you use fresh, you may want to add some extra ice.
  • Don't have a blender? A food processor will work too. You may need to stop once or twice to wipe down the sides of the bowl with a spatula.
  • Make virgin blueberry mojito mocktails! Also known as a "nojito," just omit the rum.
  • Frozen blueberry mojitos for a crowd? This recipe is easily doubled.
