Make the simple syrup: Over low heat, add sugar and water to a small saucepan, stirring occasionally until the sugar has fully dissolved. Remove from heat and set aside to cool completely.
Make the mojitos: In a blender, add blueberries, mint leaves, simple syrup, white rum, lime juice, and ice. Blend until smooth. Pour into two glasses and garnish with mint and a slice of lime if desired.
Notes
This recipe calls for frozen blueberries, but if you use fresh, you may want to add some extra ice.
Don't have a blender? A food processor will work too. You may need to stop once or twice to wipe down the sides of the bowl with a spatula.
