Strawberry Beet Popsicles Recipe (Gluten-Free, Vegan)

An easy fruit-forward popsicle recipe with a healthy beet boost.

  • 3 cups strawberries 1 lbs, tops removed
  • half of one medium beet peeled and diced
  • 1-13.5 oz can full fat coconut milk
  • 1/2 teaspoon pure vanilla extract
  • 2-3 tablespoons maple syrup


  1. Place all ingredients in a high-powered blender. Blend on high until smooth (this may take 2-3 minutes depending on your blender).
  2. Pour mixture into a popsicle mold (I used this one). Insert popsicle sticks and place in the freezer for 2 to 3 hours or until frozen.
  3. When ready to eat, allow popsicle mold to sit out of fridge for a couple minutes and run warm water over the outside of the molds for a cleaner removal.
