In a medium saucepan, add water, cane sugar, and ginger. Stir occasionally while bringing to a boil. Once at a boil, remove from heat and allow to cool for 20-25 minutes.
Strain simple syrup through a fine mesh strainer into a sealable container. Store syrup in the refrigerator.
Cocktail
In a cocktail glass, fill with ice, add berry infused vodka, lemon juice, and ginger simple syrup. Stir. Add a splash of club soda and/or garnish with candied ginger if desired.
Notes
You can use homemade berry-infused vodka (choose one type of berry or a mixed berry combination) or a store-bought berry vodka.
