Strawberry Overnight Oats

This easy Strawberry Overnight Oats recipe is perfect for busy mornings. Made with whole-grain oats, fresh strawberries, and sweetened with a touch of maple syrup. Gluten-free and vegan.

Ingredients

  • 1 cup chopped strawberries
  • 3-4 tablespoons maple syrup
  • 1 cup gluten-free rolled oats
  • pinch of salt
  • 1 cup unsweetened almond milk or non-dairy milk of choice
  • 1 teaspoon pure vanilla extract

Instructions

  • Combine maple syrup and strawberries in a mixing bowl. Mash strawberries with a fork.
  • Add the oats, salt, milk, and vanilla extract to the bowl. Stir to combine. Divide mixture between two small mason jar or containers. Seal and chill in fridge for at least 4 hours or overnight. To serve, top cold oats with extra chopped strawberries.
