Blueberry Gummies

Bright, fruity, and naturally sweetened, these homemade Blueberry Gummies are made with blueberry juice, coconut water, lemon juice, honey, and gelatin. They are a fun, healthier treat for both kids and grown-ups. Gluten-free, dairy-free, and refined sugar-free.

Ingredients

  • 1 cup coconut water chilled
  • 5 tablespoons grass-fed beef gelatin powder
  • 2 cups 100% blueberry juice unsweetened
  • juice of one lemon
  • 1-2 tablespoons honey or maple syrup
  • pinch of salt

Instructions

  • Place cold coconut water in a glass measuring cup or small bowl. Sprinkle gelatin into cold coconut water and whisk until dissolved. Set aside for 2-3 minutes to allow gelatin to bloom.
  • In a small saucepan, gently warm blueberry juice, coconut water, lemon juice, and honey over low heat until warm. Don't bring to a boil.
  • Keep saucepan over very low heat and transfer bloomed gelatin to liquid. Stir until gelatin has dissolved. Remove from heat and stir in a pinch of salt.
  • Carefully pour blueberry mixture into an 8x8 ceramic baking dish or silicone gummy molds. Chill in the fridge for at least 2-3 hours or overnight until fully set and firm to the touch. Cut into bite-sized pieces or pop gummies out of molds.

Notes

To store: Keep in an airtight container in the fridge for up to 1 week.
