Freezer Chicken Fajitas (Gluten-Free)

These Freezer Chicken Fajitas feature tender strips of chicken breast and sweet bell peppers marinated in lime juice and spices then frozen. With just 10 minutes of prep, they're the perfect easy dinner for stocking the freezer. Gluten-free, dairy-free, egg-free.

Ingredients

  • 1 ½ pounds chicken breast sliced into strips
  • 2 tablespoons avocado oil
  • 1 lime juiced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon onion powder
  • ½ teaspoons smoked paprika
  • 3 garlic cloves minced
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 red pepper sliced
  • 1 green pepper sliced
  • 1 yellow pepper sliced

Instructions

  • In a gallon size ziploc freezer bag, combine avocado oil, lime juice, chili powder, cumin, onion powder, smoked paprika, garlic, salt, and pepper. Seal and shake to mix.
  • Add sliced chicken strips and peppers to the bag, pressing out excess air before sealing. Lay flat on a baking sheet and freeze until solid, remove the baking sheet and store in the freezer until use (up to 3 months).
  • When planning to use, thaw freezer bag chicken fajitas in the refrigerator overnight.
  • Stovetop: Sear in a hot skillet or grill pan until cooked through, about 7 minutes, and the internal temperature of chicken reaches 165 degrees Fahrenheit. Season with salt and pepper as desired.
  • Oven: Preheat oven to 400 degrees Fahrenheit. Spray a large baking sheet with cooking spray and spread the chicken fajita mixture out in an even layer. Bake for 20 minutes or until chicken reaches an internal temperature of 165 degrees Fahrenheit.
  • Serve with gluten-free tortillas or over rice.

Notes

Storage: Store the (uncooked) fajita meal in the freezer for up to 3 months.
Leftover storage: Store leftover cooked, cooled fajita filling in an airtight container in the refrigerator for up to 3 days.
Reheating: Reheat leftovers in the microwave or in a skillet over a medium-low heat, stirring occasionally, until heated through.
