Ingredients

  • 16 Medjool dates pitted
  • 4 tablespoons natural peanut butter
  • ¼ cup raw peanuts
  • sea salt for sprinkling

Chocolate Sauce

  • ¼ cup + 2 tablespoons unsweetened cocoa powder or cacao powder
  • ¼ cup + 2 tablespoons coconut oil
  • 2-3 tablespoons maple syrup room temperature
  • ¼ teaspoon pure vanilla extract
  • pinch of sea salt

Instructions

  • Slice each Medjool date lengthwise (without cutting all the way through) and remove the pits if necessary. Prepare a small baking sheet with parchment paper.
  • Spoon 1 teaspoon of peanut butter into each date and press a 2-3 peanuts into the center. Place on baking sheet and place in freezer for 15 minutes to firm.
  • In a small microwave-safe bowl, melt coconut oil for one to two 30-second intervals. Once cooled, whisk in maple syrup, cocoa powder, vanilla extract, and a pinch of sea salt until smooth.
  • Using a fork, dip each stuffed date into the chocolate, coating completely. Return to the tray and sprinkle with crushed peanuts and sea salt. Place stuffed dates on a parchment-lined baking sheet and freeze for 15–20 minutes.

Notes

Tip: Make sure the maple syrup is at room temperature and the melted coconut oil has had time to cool; otherwise, the mixture will seize up.
Substitutions: Use crunchy natural peanut butter and omit stuffing the dates with peanuts.
To store: Keep refrigerated for up to 1 week or freeze for 1–2 months.
