A naturally sweet treat with just 6 ingredients! These homemade healthy Date Snickers are stuffed with peanut butter and peanuts, then coated in a simple chocolate shell. Gluten-free, dairy-free, and vegan, they make the perfect no-bake dessert or midday snack.
Slice each Medjool date lengthwise (without cutting all the way through) and remove the pits if necessary. Prepare a small baking sheet with parchment paper.
Spoon 1 teaspoon of peanut butter into each date and press a 2-3 peanuts into the center. Place on baking sheet and place in freezer for 15 minutes to firm.
In a small microwave-safe bowl, melt coconut oil for one to two 30-second intervals. Once cooled, whisk in maple syrup, cocoa powder, vanilla extract, and a pinch of sea salt until smooth.
Using a fork, dip each stuffed date into the chocolate, coating completely. Return to the tray and sprinkle with crushed peanuts and sea salt. Place stuffed dates on a parchment-lined baking sheet and freeze for 15–20 minutes.

Tip: Make sure the maple syrup is at room temperature and the melted coconut oil has had time to cool; otherwise, the mixture will seize up.Substitutions: Use crunchy natural peanut butter and omit stuffing the dates with peanuts.
