If your dates are not already pitted, you might want to remove the pits with a paring knife for easier use later. Wash the dates thoroughly under cool running water. Pat the wet dates dry with a paper towel. It's important to ensure they're dry to prevent any crystal formation.
Depending on how you plan to use them, you might want to chop the dates into smaller pieces instead of using whole dates. This step is optional.
Spread the dates in a single layer on a baking sheet lined with parchment paper. Place the baking sheet in the freezer for 2 hours until the dates are firm. This prevents them from sticking together.
Transfer the dates (whole, pitted, or chopped) into freezer-safe bags or airtight containers. Squeeze out as much air as possible from the bags to prevent freezer burn. Label the bags or containers with the freezing date.
Place the packaged dates in the freezer. They can be stored for up to 12 months.
Notes
To thaw: Place frozen fruit in the refrigerator until thawed or use one of the two methods below for a quicker thaw.
Room Temperature - Place the frozen dates in a bowl of cold water at room temperature for about 30 minutes to 1 hour. The time required may vary depending on the size and thickness of the dates.
Microwave - The quickest method is to place the frozen fruit on a microwave-safe plate and microwave them on a low setting (such as 30% power) in short intervals (about 20-30 seconds at a time).
