Instructions
Combine all ingredients except chocolate chips in a mixing bowl. Stir until mixture is smooth. Fold in chocolate chips.
Scoop dough with a tablespoon and roll into balls. Place into an airtight container and store in the refrigerator. If layering bites on top of each other, divide with a piece of parchment paper to avoid sticking.
Notes
To store: Keep these in an airtight container in the refrigerator for up to one week. To freeze: Place the balls on a baking sheet lined with parchment paper or a silicone mat. Make sure they are not touching each other. Put the baking sheet in the freezer and let them freeze for about 1 to 2 hours or until they become solid. Once frozen, transfer them into a freezer-safe container or a freezer-safe bag.
