These No-Bake Monster Cookie Energy Balls recipe is made with creamy peanut butter, hearty oats, chocolate candies, and sweetened with maple syrup. They're an easy quick snack or sweet treat! Gluten-free, dairy-free, and vegan.
Place oats, maple syrup, peanut butter, and vanilla extract in a large mixing bowl. Mix until oat are coated. Add 2 teaspoons water and mix again.
Fold in chocolate chips and chocolate candies. Transfer mixing bowl to the refrigerator and chill for 30 minutes.
Once chilled, scoop energy ball dough with a tablespoon or a #40 cookie scoop and roll it into a smooth ball with your hands. Place the cookie balls into an airtight container and store in the refrigerator.
