This Bunny Bait recipe is a sweet and salty gluten-free snack mix perfect for Easter celebrations. Made with Rice Chex, Cheerios, gluten-free pretzels, dairy-free chocolate gems, bunny graham crackers, and coated in vegan white chocolate, it’s a no-bake treat that comes together in minutes. Gluten-free, dairy-free and egg-free.
Line a large baking sheet with parchment paper and set aside.
In a large mixing bowl, combine the Rice Chex, pretzels, bunny grahams, Cheerios, chocolate gems, and peanut chocolate gems.
Melt the vegan white chocolate and coconut oil in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth.
Drizzle the melted white chocolate over the cereal mixture and quickly stir to coat.
Spread the mixture onto the prepared baking sheet in an even layer. Sprinkle the pastel sprinkles on top if using. Let the mix cool at room temperature until the chocolate hardens (about 30 minutes).
Break into pieces and store in an airtight container at room temperature for up to 1 week.
Notes
The mix may clump if not stirred quickly after adding the melted chocolate. Work quickly to evenly distribute the white chocolate coating.
