Dairy-free chocolate gems & peanut chocolate gems – Colorful and allergy-friendly! I use the Unreal brand. Substitute with regular dairy-free chocolate chips or chunks. Dairy not an issue? Feel free to use pastel M&M candies. For a nut-free option, use pastel jelly beans.
Vegan white chocolate chips + coconut oil – melted together to bind and coat.
Pastel sprinkles (optional) – for extra sparkle, add some Easter sprinkles! Use fun sprinkles with bright pastel colors.
How to make bunny bait
Step 1: Prepare a cookie sheet lined with parchment paper or wax paper. Combine the dry ingredients – Chex, Cheerios, pretzels, bunny grahams, and chocolate gems – in a large mixing bowl
Step 2: Melt white chocolate with coconut oil in a microwave-safe bowl and heat in the microwave for 30-second intervals. stirring until smooth.
Step 3: Pour the melted white chocolate over the dry ingredients and gently stir to coat evenly.
Step 4: Spread the cereal mixture onto the prepared baking sheet in an even layer. Top with sprinkles, if using. Let set at room temperature until firm.

Bunny Bait (Easter Chex Mix)
Ingredients
- 2 cups Rice Chex
- 1 cup gluten-free pretzels
- 1 cup gluten-free bunny grahams I use Annie's brand
- 1 cup Cheerios
- ½ cup dairy-free chocolate peanut gems I use UnReal brand
- ½ cup dairy-free chocolate gems
- 1 ¾ cups vegan white chocolate chips
- 2 teaspoons coconut oil
- gluten-free pastel sprinkles optional
Instructions
- Line a large baking sheet with parchment paper and set aside.
- In a large mixing bowl, combine the Rice Chex, pretzels, bunny grahams, Cheerios, chocolate gems, and peanut chocolate gems.
- Melt the vegan white chocolate and coconut oil in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth.
- Drizzle the melted white chocolate over the cereal mixture and quickly stir to coat.
- Spread the mixture onto the prepared baking sheet in an even layer. Sprinkle the pastel sprinkles on top if using. Let the mix cool at room temperature until the chocolate hardens (about 30 minutes).
