This healthy Gluten-Free Chicken Salad recipe is made with dairy-free yogurt, crisp celery, chicken, red onion, and seasoning. Serve over leafy greens, in a wrap, or as a sandwich.
In a large bowl, combine the yogurt, celery, red onion, Dijon mustard, lemon juice, salt, pepper, and thyme until combined.
Add the chicken to the bowl with the dressing. Stir until all ingredients are well coated.Add more salt and pepper to taste if desired.
For best flavor, cover and refrigerate the chicken salad for at least 30 minutes before serving.
