Gluten-Free Chicken Salad

This healthy Gluten-Free Chicken Salad recipe is made with dairy-free yogurt, crisp celery, chicken, red onion, and seasoning. Serve over leafy greens, in a wrap, or as a sandwich.

Ingredients

  • 2 cups cooked chicken, shredded
  • ¾ cup plains dairy-free yogurt or Greek yogurt
  • 1 cup celery, sliced
  • ¼ cup red onion, finely chopped
  • 2 teaspoons Dijon mustard
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon dried thyme
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  • In a large bowl, combine the yogurt, celery, red onion, Dijon mustard, lemon juice, salt, pepper, and thyme until combined.
  • Add the chicken to the bowl with the dressing. Stir until all ingredients are well coated.Add more salt and pepper to taste if desired.
  • For best flavor, cover and refrigerate the chicken salad for at least 30 minutes before serving.

Notes

Optional mix-ins - Red or green grapes, pecans, sesame seeds, or sunflower seeds.
To store: Store in an airtight container in the refrigerator for 2-3 days.
