Vegan BLT Sandwich
This Vegan BLT Sandwich uses mushroom bacon, tomatoes, lettuce, vegan mayo, and gluten-free bread. A vegetarian sandwich recipe to enjoy for lunch or dinner! *Prep time includes making homemade mushroom bacon.

2 slices gluten-free bread vegan too if needed 2 tablespoons vegan mayonnaise 1 cup iceberg lettuce 2 slices tomato salt and pepper to taste 6 strips mushroom bacon (store-bought vegetarian bacon can also be used.)
Make the mushroom bacon and allow to cool. Toast two slices of gluten-free bread. Spread vegan mayo on top of each slice of bread. Layer pieces of lettuce atop each slice. Place one tomato slice on top of each lettuce-covered slice of bread. Salt and pepper each slice of tomato.
Place 2-3 slices of mushroom bacon on each tomato slice.
Carefully close the sandwich and cut in half. Serve immediately.
