6stripsmushroom bacon(store-bought vegetarian bacon can also be used.)
Toast two slices of gluten-free bread. Spread vegan mayo on top of each slice of bread.
Layer pieces of lettuce atop each slice. Place one tomato slice on top of each lettuce-covered slice of bread. Salt and pepper each slice of tomato.
Place 2-3 slices of mushroom bacon on each tomato slice.
Carefully close the sandwich and cut in half. Serve immediately.
