    Vegan BLT Sandwich (Gluten-Free)

    This Vegan BLT Sandwich uses mushroom bacon, tomatoes, lettuce, vegan mayo, and gluten-free bread. A vegetarian sandwich recipe to enjoy for lunch or dinner!

    Bacon, lettuce, and tomato could be considered one of the great classic sandwiches.

    But whether you don't have bacon on hand or don't eat bacon, this recipe is for you.

    Vegan BLT Ingredients

    To make this sandwich recipe completely meatless, vegan mushroom bacon is used in lieu of the real thing.

    What is mushroom bacon? With a simple marinade and spices, different types of mushrooms can be transformed into chewy, "meaty" slices. 

    Here are the major ingredients you will need for this gluten-free sandwich recipe:

    • Fresh tomato
    • Lettuce
    • Portobello mushrooms
    • Vegan mayo
    • Gluten-free bread
    • Salt and pepper

    To make your own vegetarian mushroom bacon, in addition to portobello mushrooms, you will also need:

    • Olive oil
    • Tamari (gluten-free soy sauce)
    • Maple syrup
    • Smoked paprika

    Do they sell vegan mayo? Yes! You can now find vegan mayonnaise in most major grocery stores and health food stores. Also known as "vegannaise," here are some brands that make it:

    • Earth Balance Mindful Mayo
    • Trader Joe's Vegan Spread and Dressing
    • Sir Kensington's Fabanaise
    • Whole Foods 365 Vegan Mayo
    • Hellman's Vegan Mayo

    How do you make a vegetarian blt sandwich?

    When you want a simple meal, it doesn't get much easier than this vegetarian BLT recipe. Making mushroom bacon is a cinch as well. Make the "bacon" ahead of time to save on prep time.

    Here are the steps to making a vegan BLT!

    1. Make the mushroom bacon and allow to cool. 
    2. Toast two slices of gluten-free bread.
    3. Spread vegan mayo on top of each slice of bread. 
    4. Layer pieces of lettuce atop each slice.
    5. Place one tomato slice on top of each lettuce-covered slice of bread.
    6. Salt and pepper each slice of tomato.
    7. Place 2-3 slices of mushroom bacon on each tomato slice.
    8. Carefully close the sandwich and cut in half.

    Ingredients

    • 2 slices gluten-free bread vegan too if needed
    • 2 tablespoons vegan mayonnaise
    • 1 cup iceberg lettuce
    • 2 slices tomato
    • salt and pepper to taste
    • 6 strips mushroom bacon (store-bought vegetarian bacon can also be used.)

    Instructions

    • Make the mushroom bacon and allow to cool.
    • Toast two slices of gluten-free bread. Spread vegan mayo on top of each slice of bread.
    • Layer pieces of lettuce atop each slice. Place one tomato slice on top of each lettuce-covered slice of bread. Salt and pepper each slice of tomato.
    • Place 2-3 slices of mushroom bacon on each tomato slice.
    • Carefully close the sandwich and cut in half. Serve immediately.
