Turkey Egg Roll in a Bowl (Gluten-Free)

This Turkey Egg Roll in a Bowl features all the classic flavors of an egg roll in satisfying bowl form. Ingredients

  • 1 cup uncooked jasmine or basmati rice
  • 1 tablespoons olive oil
  • 1 pound ground turkey
  • 8 ounces broccoli coleslaw mix bagged
  • ¼ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • 2 pinches cayenne pepper
  • 6 tablespoons gluten-free soy sauce
  • 1 tablespoon sesame oil
  • 3 teaspoons apple cider vinegar or rice vinegar
  • 1 teaspoon honey
  • ½ lime juiced

Instructions

  • Cook rice according to package directions. Set aside, covered, to keep warm.
  • Heat 1 tablespoon olive oil in a large skillet or wok over medium-high heat until shimmering.
  • Add ground turkey to the skillet, breaking it up with a spatula. Cook for about 7 minutes, stirring occasionally, until browned and cooked through.
  • Add salt, pepper, garlic powder, and 2 pinches of cayenne pepper, stirring to coat the turkey evenly.
  • Add broccoli slaw to the skillet and stir to combine with the turkey. Cook for about 5 minutes, stirring occasionally, until the broccoli slaw softens and wilts down but still has a little crunch.
  • Add gluten-free soy sauce, sesame oil, apple cider vinegar, and honey. Simmer for 2-3 minutes. Add lime juice and stir to combine.
  • Season with additional salt and pepper as desired. Divide rice into bowls and serve turkey mixture over top.

Notes

For extra crunch, top with sliced green onions or toasted sesame seeds.
Storage: Leftovers keep well in the fridge for 3-4 days, great for meal prep.
Reheating: Reheat in the microwave in a covered bowl, microwaving in 30 second bursts until piping hot throughout.
