Flavorful Dinner, Ready in Under 30 Minutes
Since classic egg rolls aren't gluten-free, this deconstructed version is my go-to when I get a craving. It's packed with flavor and super easy, thanks to using pre-shredded veggies in the form of broccoli coleslaw mix. This adds delicious crunch and flavor with minimal fuss, meaning dinner can be on the table in less than 30 minutes.

Ingredients and Substitutions
Rice - Jasmine or basmati rice form the gluten-free base of this bowl. For a lower carb option, try cauliflower rice instead.
Olive oil - A touch of oil helps everything to cook up nicely. Avocado oil also works well.
Ground turkey - A lean protein that cooks quickly, making it great for speedy meals. Ground chicken, beef or pork all work well as substitutes.
Broccoli coleslaw mix - Pre-cut matchsticks of crisp broccoli, carrot, and cabbage. Requires zero prep, helping this meal come together super fast. If you can't find it, you can use a regular coleslaw mix or julienne/shred your own carrots, cabbage and broccoli stalks instead.
Seasonings - A combination of garlic powder, cayenne pepper, black pepper and salt all build layers of savory flavor. Feel free to add more cayenne or black pepper for a spicier bite.
Gluten-free soy sauce - Adds a salty-savory note. Gluten-free tamari or coconut aminos can be used as substitutes.
Sesame oil - This flavorful oil has a toasty, nutty flavor that ties everything together.
Vinegar and lime juice - Add a bright, balancing note to the dish. You can use either apple cider vinegar or rice vinegar here. Freshly-squeezed lime juice is best as bottled juice can taste bland.
Honey - Brings a little natural sweetness to round out the salty-tangy flavors. Maple syrup or agave nectar work well, too.
How to Make Turkey Egg Roll in a Bowl

Step 1: Cook rice according to package directions. Set aside, covered, to keep warm. Heat 1 tablespoon olive oil in a large skillet or wok over medium-high heat until shimmering. Add ground turkey to the skillet, breaking it up with a spatula. Cook for about 7 minutes, stirring occasionally, until browned and cooked through.

Step 2: Add salt and pepper, garlic powder, and 2 pinches of cayenne pepper, stirring to coat the turkey evenly. Add broccoli slaw to the skillet and stir to combine with the turkey. Cook for about 5 minutes, stirring occasionally, until the broccoli slaw softens and wilts down but still has a little crunch.

Step 3: Add gluten-free soy sauce, sesame oil, apple cider vinegar, and honey. Simmer for 2-3 minutes. Add lime juice and stir to combine.

Step 4: Season with additional salt and pepper as desired. Divide rice into bowls and serve turkey mixture over top.ย
Variations
Switch up this bowl with different additions and swaps:
- Make it vegan: Swap the turkey for crumbled firm tofu tossed in a little cornstarch. Use maple syrup in place of honey.
- Add a spicy kick: Drizzle with chili oil before serving for added flavor and heat.
- Add more veggies: Stir in a handful of diced mushrooms, beansprouts, or edamame beans along with the coleslaw mix.
