Old-fashioned oats - Also known as rolled oats, they are a great source of vitamins, minerals, fiber, and protein. Make sure you choose certified gluten-free oats to keep things gluten-free.
Fresh rhubarb - You can find rhubarb in the produce section of the grocery store or at your local farmers market.
Unsweetened almond milk - Almond milk, coconut milk, soy milk, or any dairy-free milk will work.
Coconut sugar and maple syrup - Instead of brown sugar or light brown sugar, this unrefined sweetener adds a similar caramel flavor.
Coconut oil - Vegan butter or plant-based butter can be used in place of coconut oil.
Ground flaxseed - Mixed with water this will make our flax egg and help bind our oatmeal bake. Ground chia seeds can be substituted.
Ground cinnamon, ground ginger, and vanilla extract - These different flavors add a natural sweetness to the oat bake.
Slivered almonds - Almonds add a great crunch to this baked oatmeal recipe.
Step-by-step instructions
Step 1: Place sliced rhubarb into a baking dish and drizzle with maple syrup.
Step 2: Combine the dry ingredients and layer over rhubarb. Combine the wet ingredients and pour over the oat mixture. Scatter almond and extra rhubarb on top and bake for 40 minutes.

Vegan Baked Oatmeal with Rhubarb
Ingredients
- 2 flax eggs 2 tablespoons ground flaxseed +6 tablespoons warm water
- 2 ½ cups fresh rhubarb cut into 1-inch pieces
- 2 cups gluten-free rolled oats
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- ½ teaspoon salt
- 1 teaspoon baking powder
- 1 tablespoon coconut sugar
- 1 ¾ cup unsweetened almond milk or milk of choice
- 2 teaspoons + ⅓ cup maple syrup, divided or honey if not vegan
- 3 tablespoons coconut oil, melted and cooled or vegan butter
- 1 teaspoon pure vanilla extract
- ⅓ cup slivered almonds or raw almond roughly chopped
Instructions
- Preheat the oven to 375 degrees Fahrenheit. Grease a 2-quart (or similar) baking dish. Prepare flax eggs in a small bowl and set aside.
- Spread rhubarb pieces in an even layer on bottom of pan, reserving about ½ cup for topping the baked oatmeal. Drizzle 2 teaspoons maple syrup over rhubarb.
- In a medium bowl, combine oats, cinnamon, ginger, salt, baking powder, and coconut sugar. Transfer mixture to prepared baking dish covering the rhubarb in an even layer.
- In a small bowl, whisk flax eggs, almond milk, maple syrup, and vanilla extract. Whisk in cooled coconut oil. Pour wet ingredients over the oats in baking dish. Gently wiggle the baking dish to make sure liquid is evenly distributed.
- Scatter reserved rhubarb and slivered almonds over top. Bake for 40 to 42 minutes or until the top is golden brown and the middle is set. Allow to cool for a few minutes before serving.
- Serve with coconut whipped cream, yogurt, or a splash of milk if desired.

thanks for the recipe; I loved it! I didn't have flaxseed so I substituted chia seeds and am happy with the turnout. Didn't add quite as much maple syrup so it is quite tart but oh so good with greek yogurt! Can't wait for tomorrow's breakfast!
