Ingredients and substitutions
Peanut butter - Creamy natural peanut butter is best - just peanuts and salt! To make this peanut-free, use almond butter, cashew butter, or sunflower seed butter as a substitute for peanut butter.
Gluten-free rolled oats - Also known as old-fashioned oats, they are a great source of vitamins, minerals, fiber, and protein. To keep things gluten-free, make sure you choose certified gluten-free oats. I do not recommend quick oats as their texture mimics flour, and the energy balls may be too dry.
Maple syrup - Naturally refined sugar-free, pure maple syrup adds the perfect amount of sweetness. Honey can be substituted as a non-vegan option, but the consistency will be slightly sticky.
Vanilla extract - Use pure vanilla extract for the best flavor.
Chocolate chips and chocolate candies - This recipe uses vegan chocolate chips and dairy-free chocolate gems. But if dairy is not an issue, regular or mini M&M candies and regular or miniature chocolate chips work great too.
Step-by-step instructions
Step 1: Place oats, maple syrup, peanut butter, and vanilla extract in a large mixing bowl. Mix until oats are coated. Add 2 teaspoons water to the peanut butter mixture and mix again.
Step 2: Fold in chocolate chips and chocolate candies. Transfer the mixing bowl to the refrigerator and chill for 30 minutes. Scoop energy ball dough with a tablespoon or a #40 cookie scoop and roll it into a ball with your hands. Place monster energy balls into an airtight container and store them in the refrigerator.

No Bake Monster Cookie Energy Balls
Ingredients

- ¼ cup maple syrup

- ¼ cup dairy-free chocolate gems
- ¼ cup vegan dark or semi-sweet chocolate chips

- 2-3 teaspoons water
