A Rich and Chocolatey No-Bake Bar
I love having a stash of these bars in the refrigerator or freezer for when a chocolate craving hits. They're perfect as a quick dessert served with a cold glass of homemade hemp milk! Made by simply mixing melted chocolate, tahini and almond butter, they have a fudgy, candy bar vibe but use ingredients you can feel good about. The combination of the gently nutty tahini and rich chocolate is particularly delicious. I've kept things simple here but you can use this recipe as a base to mix in chopped nuts, puffed rice or dried fruits to add variety and texture.

Ingredients and Substitutions
Chocolate chips - Use dairy-free chocolate chips, if needed (I like the Enjoy Life brand). Helps the bars to set and brings a rich, chocolatey flavor.
Tahini - A paste made from sesame seeds with a toasty flavor and creamy mouthfeel. Creates a fudgy texture when combined with the chocolate. Cashew butter or extra almond butter work well as substitutes.
Almond butter - This nut butter has a creamy texture and roasted flavor. Almonds are rich in vitamin E, plus provide fiber and protein to the bars. Can be substituted with peanut butter or cashew butter.
Pure vanilla extract and salt
How to Make No Bake Chocolate Tahini Bars
Before you start: Line an 8x8-inch baking pan with parchment paper.

Step 1: Place chocolate chips and almond butter in a medium microwave-safe bowl. Microwave for 30 second intervals, stirring after each, until almost all chocolate chips have melted. Stir to completely to incorporate chocolate and almond butter until smooth.

Step 2: Stir in tahini until incorporated. Whisk in remaining ingredients until smooth.

Step 3: Pour into a parchment-lined loaf pan and spread evenly with a rubber spatula.

Step 4: Cover the pan and freeze for 30-45 minutes, slice into bars, then transfer to the refrigerator for storage.
Variations
These tahini bars are so easy to customize!
- Mix in a couple of handfuls of puffed rice or flaked almonds for a crunchy texture.
- Fold in chopped dates or raisins for a chewy, fruity twist.
- Drizzle the bars with melted, dairy-free white chocolate chips.
- Add a few drops of pure peppermint oil or a sprinkle of finely grated orange zest.

Recipe tips
- Natural nut and seed butters tend to separate as they sit in the jar. Because of this, it's really important to give them a good stir, right down to the bottom of the jar, before measuring and using in a recipe.
- For the cleanest cuts when slicing the bars, dip your knife into hot water and wipe it dry between slices.
- These bars tend to soften quickly at room temperature so store them in the refrigerator to maintain their shape.
- You can also freeze these bars, individually wrapped in parchment in an airtight container, for up to 3 months.
