This last weekend we spent some time with dear friends in Asheville, North Carolina. One evening, we were discussing “last meal-worthy” foods. While my last meal would probably consist of pizza, without a doubt, my last dessert would be these peanut butter swirl brownies….
There is nothing like a slice of banana bread. As a self-proclaimed lover/hater of bananas, throw some in a baked good and I’ll be the first in line for a bite.
Add some tahini into that banana bread and I might not want to share.

With summer in our sights and hopefully some backyard bbq gatherings in our near future, blondies seemed like an appropriate way to welcome summer. Full disclosure, for me, the shift from spring to summer is always a bit jilting. The end of spring leaves me exhausted as the school year wraps up, and the beginning of summer with no set schedule in sight slightly freaks me out (type A, right here). These honey blondies come together effortlessly, and it’s the simple whole ingredients I love. Almond flour and coconut flour make up the protein and fiber-packed base. The egg binds and lifts, and the honey and coconut sugar caramelize for an ever-so-sweet and gooey finish….
Traditions can be a funny thing. In many cases, at least in my family, traditions result or stick due to the funny memories they create. Laughter is a key component, and when something can make you laugh just as a hard 20 years later as it did the first time, in my eyes you’ve got a winner….
Every time the academic year comes to a close I find myself in a transitional lurch. From super structure and routine I am catapulted into the complete opposite before I even know what’s happened. Sounds wonderful, you say? It is, to be sure. But my obsessive need to be doing gives me a guilt trip like no other when routine disappears. We’ve already spent several nights in a row staying up late to watch way too many episodes of The Fall on Netflix. Consequently, (my night owl husband unfazed) the next morning doesn’t start nearly as early as I’d hoped. And man, the guilt starts creeping on in….
We just finished our last week of classes, and I’ve decided that no matter how old you are, the anticipation and excitement of summer break never gets old. A full-fledged bonus of working in education is the child-like freedom of summer. So to celebrate, today’s recipe is a two-for-one special, as the double chocolate chip cookies that make up these cookie sandwiches have become one of my favorites all on their own. I first made these cookie sandwiches for our picnic in the park to celebrate Jordan’s birthday and again on Mother’s Day. Not having fresh strawberries on hand initially, I made the strawberry-coconut cream by grinding dried strawberries into a powder.
