Ingredients and substitutions
Here are a few quick notes about the main ingredients in this recipe. You can see a complete list of ingredients and instructions in the recipe card below.
Almond butter - All-natural is best for this recipe as its simple ingredients don't have any added sugar or oils. Cashew butter or peanut butter can be substituted but will alter the flavor profile.
Maple syrup - This natural sweetener helps bind our gluten-free cookie and adds natural sweetness.
Organic cane sugar or coconut sugar - Choose the sweetener you prefer. Coconut sugar has a more subtle sweetness like brown sugar.
Almond flour - Gives our cookies a perfect tender crumb and provides a good source of protein. Avoid using almond meal as it will give the cookies more of a gummy texture.
Gluten-free oats - Make sure you choose certified gluten-free oats to keep things gluten-free. Rolled oats (also known as old-fashioned oats) give our cookies a chewier texture. Avoid instant oats and quick oats.
Almond milk - Any nondairy milk or cow's milk will work here.
Dairy-free chocolate chips - Choose vegan semi-sweet chocolate chips to keep things dairy-free. Omit the chocolate if you prefer!
Step-by-step instructions
Before you start: Get out all the ingredients, this will go quickly!
Step 1: Combine almond butter and maple syrup in a medium bowl. Add the dry ingredients (organic cane sugar, almond flour, oats, and vanilla extract) to the wet ingredients and stir to combine.
Stir in one tablespoon almond milk until all ingredients are incorporated. Fold in the chocolate chips.
Step 2: Preheat the air fryer to 350 degrees Fahrenheit. Divide into four cookie dough balls. Line the bottom of the air-fryer basket or rack with parchment paper.
Place two cookie dough balls in basket on parchment in a single layer with space around each cookie. Bake for 5 minutes. The oven-baked cookies should be golden brown. Transfer to a cooling rack.
Helpful tips
- For the parchment: Fold the parchment paper in half lengthwise and then in half again. Cut 4 slits along edge. This will create little holes for better air flow in the air fryer. This recipe was tested with parchment paper without holes and browned up in just the right ways.
- Preheating helps make sure the cookie bakes quickly and evenly. DO NOT preheat with the parchment paper in the basket. Only use parchment paper when you are ready to place cookie dough on it.
- The cookie dough will be sticky. Spray your hands with cooking spray or water to prevent sticking.
- Only want 1 or 2 cookies? The remaining cookie dough can be refrigerated overnight or stored in the freezer for later.
Variations
You can easily change the mix-ins in this cookie recipe. Swap in white chocolate chips for semisweet chocolate chips, raisins, dried cranberries, pepitas, sunflower seeds, or dried cherries.
Storage
Store leftover cookies in an airtight container for 4-5 days at room temperature. Be sure cookies cool completely on a wire rack before storing.
To freeze, place cookie dough balls on a baking sheet and place in the freezer until solid. Transfer each cookie dough ball to a freezer-safe ziplock bag or container. Keep in the freezer for up to 3 months.

📖 Recipe
Air Fryer Oatmeal Cookies
Equipment
Ingredients
- ¼ cup maple syrup
- ½ cup almond butter
- 2 tablespoons organic cane sugar or coconut sugar
- ½ cup (55g) almond flour
- ½ cup (45g) gluten-free oats
- ½ teaspoon salt
- 1 tablespoon unsweetened almond milk
- 1 teaspoon pure vanilla extract
- ¼ cup (38g) dairy-free chocolate chips
Instructions
- In a medium bowl, combine maple syrup and almond butter. Stir to combine. Add organic cane sugar, almond flour, oats, and salt. Stir to combine, then add almond milk and vanilla extract. Stir until all ingredients are incorporated. Fold in chocolate chips.
- Preheat air fryer to 350 degrees Fahrenheit.
- Cut parchment paper to fit and line the bottom of the basket (careful not to touch warm sides!) of your air fryer. Allow for a little room around the perimeter of the parchment for air flow.
- Divide the dough into 4 sections. Roll each section into a ball, then slighly flatten with your hands into a disc. Place 2 cookie dough discs in the basket of the air fryer, spaced apart. If you have a larger air fryer basket, you can bake all 4 at once as long as there is room between each cookie for air flow.
- Bake for 5-6 minutes. Cookies should be a golden brown. Remove baked cookies and parchment paper together and transfer to a wire rack. Allow to cool for at least 5 minutes before eating.
Madison
Does it need the added sugar or will it be good with just the maple syrup?
Tessa
Hi Madison! You can omit the added sugar. It will just be slightly less sweet but still good!
Kim
So good!
