Ingredients and Substitutions

Medjool dates - Provide moisture, caramelโlike sweetness, and binding power. You can use any soft date variety and soak them if they're dry. I love to freeze Medjool dates so that I always have some on hand.
Gluten-free oats - To ensure these are gluten-free, purchase certified gluten-free oats.
Almond butter - Adds protein and a richness to the date balls. Substitute cashew butter or sunflower seed butter if needed. They will slightly alter the taste but are more neutral than other nut or seed butters.
Vanilla extract - This humble ingredient ties the caramel flavor together!
How to Make Salted Caramel Bliss Balls

Step 1: Place dates and oats in the bowl of a food processor. Process until oats are broken down into medium chunks.

Step 2: Add almond butter, vanilla, and salt and process until oats are in very small pieces and the mixture has become thick.

Step 3: Add one teaspoon of water to the mixture and process again. If the mixture is still dry, add one or two more teaspoons of water until you can squeeze the mixture together with your hand and it holds together.

Step 4: Scoop date energy ball dough with a tablespoon and roll it into a ball with your hands. Place date balls onto a parchment paper-lined baking sheet or cookie sheet. Place in the fridge for 20 minutes to set before transferring balls to an airtight container.

 - ยพ cup old fashioned gluten-free oats
 - 3 tablespoons natural almond butter, well stirred
 - ยฝ teaspoon pure vanilla extract
 - 2-3 pinches sea salt
 - 2-3 teaspoons water
 
Instructions

 - Add one teaspoon of water to the mixture and process again. Test the mixture and see if it sticks together when you squeeze it with your fingers. If the mixture is still dry, add one or two more teaspoons of water until you can squeeze the mixture together with your hand and it holds together.
 - Scoop dough with a tablespoon and roll it into a ball with your hands. Place bliss balls onto a baking sheet or cookie sheet. Place baking sheet in the fridge for at least 20 minutes to set before transferring balls to an airtight container.
