Lean ground beef - I like using 93% lean ground beef, but use what you prefer. Ground turkey works well as a substitute.
Tomato paste - An easy and cheap way to get great tomato flavor.
Nutritional yeast - This adds a cheesy tang without the cheese!
Beef broth - Adds a rich savory flavor. Vegetable broth or chicken broth can be subbed.
Dried minced onions - To keep things quick, easy, and tear-free, dried minced onions add great flavor. To substitute with fresh onion, use one small onion.
Dairy-free cream cheese - Choose your favorite vegan cream cheese brand to keep this dairy-free. If dairy is not a concern, regular cream cheese works too.
Gluten-free pasta - I prefer gluten-free spiral pasta in this one-pot hamburger recipe.

Step-by-step instructions
- Warm olive oil over medium heat in a large pot. Add ground beef and minced onions and brown.
- Stir in chili powder, garlic powder, salt, pepper, nutritional yeast, and tomato paste.
- Add the beef broth and bring to a boil. Stir in pasta and lower heat slightly. Allow pasta to cook until pasta is tender and most of the liquid has been soaked up.
- Stir in the cream cheese until melted.
Storing and reheating
To store, transfer leftovers to an airtight container in the refrigerator for 2-3 days.
To reheat, place leftovers in a microwave-safe dish and heat for one-minute intervals in the microwave, stirring after each. Leftovers can also be heated on the stovetop in a medium saucepan.

- 2 teaspoons chili powder
