Ingredients and substitutions
Here are a few quick notes about the ingredients in this recipe. You can see a complete list of ingredients and simple steps in the recipe card below.
Lean ground beef - I like using 85-93% lean ground beef. Ground turkey works well as a substitute.
Fresh mushrooms - You can use fresh white mushrooms or baby bella mushrooms.
Dijon mustard - The vinegar in Dijon mustard helps give the stroganoff a tangy flavor.
Gluten-free egg noodles - To avoid eggs, substitute with a different gluten-free broad noodle such as gluten-free pappardelle.
Beef broth - Adds a rich savory flavor to the sauce. Beef stock, vegetable broth, or chicken broth can be subbed.
Dairy-free cream cheese - Regular cream cheese can be used if dairy is not an issue. This creates a rich creamy sauce. Dairy-free sour cream would make a good substitute.
Dried minced onion - Dried minced onions add great flavor and eliminate chopping an onion. To substitute with fresh onion, use one small onion. To substitute with onion powder, use one teaspoon.
Nutritional yeast - This adds a cheesy tang while keeping things dairy-free!
Garlic powder, paprika, dried thyme, red pepper flakes - These pantry staples round out the flavors in this easy recipe.
Step-by-step instructions
Step 1: Warm olive oil over medium heat in a large pot. Add a pound of ground beef, and minced onions, and brown the ground beef.
Step 2: Stir in garlic powder, paprika, nutritional yeast, salt, pepper, dried thyme, red pepper flakes, and Dijon mustard.ย Stir in mushrooms and cook for 1-2 minutes.
Step 3: Add the beef broth and bring to a boil at medium-high heat. Stir in pasta noodles and lower heat slightly. Allow to cook until you have tender egg noodles and most of the liquid has been soaked up.
Step 4: Stir in the cream cheese until melted.ย
