Lean ground beef - I like using 85-93% lean ground beef. Ground turkey works well as a substitute.
Fresh mushrooms - You can use fresh white mushrooms or baby bella mushrooms.
Dijon mustard - The vinegar in Dijon mustard helps give the stroganoff a tangy flavor.
Gluten-free egg noodles - To avoid eggs, substitute with a different gluten-free broad noodle such as gluten-free pappardelle.
Beef broth - Adds a rich savory flavor to the sauce. Beef stock, vegetable broth, or chicken broth can be subbed.
Dairy-free cream cheese - Regular cream cheese can be used if dairy is not an issue. This creates a rich creamy sauce. Dairy-free sour cream would make a good substitute.

Step-by-step instructions
- Warm olive oil over medium heat in a large pot. Add a pound of ground beef, and minced onions, and brown the ground beef.
- Stir in garlic powder, paprika, nutritional yeast, salt, pepper, dried thyme, red pepper flakes, and Dijon mustard. Stir in mushrooms and cook for 1-2 minutes.
- Add the beef broth and bring to a boil at medium-high heat. Stir in pasta noodles and lower heat slightly. Allow to cook until you have tender egg noodles and most of the liquid has been soaked up.
- Stir in the cream cheese until melted.

Homemade Hamburger Helper Beef Stroganoff

- 2 tablespoons olive oil
- 1 lb lean ground beef or ground turkey
- 1 ½ tablespoons dried minced onion
- 8 ounces mushrooms (white or baby bella) sliced
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- 1 tablespoon nutritional yeast
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon dried thyme
- ⅛ teaspoon red pepper flakes
- 2 tablespoons Dijon mustard
- 3 cups beef broth
- 3 cups (5.5oz) gluten-free egg noodles or other gluten-free noodles
- 4 oz dairy-free cream cheese
Instructions
- Warm olive oil over medium heat in a large pot or Dutch oven. Add ground beef, and dried minced onions, and brown the ground beef.
- Stir in garlic powder, paprika, nutritional yeast, salt, pepper, dried thyme, red pepper flakes, and Dijon mustard. Stir in mushrooms and cook for 1-2 minutes.
- Add the beef broth, followed by noodles, and bring to a boil at medium-high heat. Once at a boil, lower heat slightly. Allow pasta to cook until the noodles are tender and much of the liquid has been soaked up.
- Stir in the cream cheese until melted. Serve warm and add extra salt and pepper if desired.
