Warm drinks, morning coffee, cocktails, and even quick bread and cookies can be enhanced with cinnamon flavor. This homemade cinnamon syrup is the perfect way to add variation to classic liquid sweetener.

    Why You'll Love This Recipe

    • An easy recipe and only 4 simple ingredients
    • Makes plenty to have on hand
    • Great way to add warm flavor to drinks and baked goods

    Ingredients and Substitutions

Here are a few quick notes about the ingredients in this recipe. You can see a complete ingredient list and instructions in the recipe card below.

Ingredients to make cinnamon syrup on a white surface.

Whole cinnamon sticks - You can find these at your local grocery store in the spice section. If needed, ground cinnamon can be used but not all of it will strain out at the end. Substitute 1 ½ teaspoons ground in place of the 3 sticks.

Organic cane sugar - Instead of white sugar, organic cane sugar is a less refined version and is also vegan-friendly.

Water - We are using a 1:1 ratio for this recipe: one cup of sugar to one cup of water. This will result in about one cup of syrup.

Pure vanilla extract - This ingredient is totally optional, but I like how a bit of vanilla extract rounds out the sweet flavor profile.

    Step-by-Step Instructions

Before you start: Get out all your ingredients, this one goes fast!

Water, sugar, and cinnamon sticks in a small saucepan.
Cinnamon syrup being strained into a small container.

Step 1: Add water, organic cane sugar, cinnamon sticks, and vanilla extract to a small saucepan. Heat over medium heat and occasionally stir until sugar dissolves. Turn down the heat to low and simmer for 20 minutes. Remove from heat. Allow to cool completely.

Step 2: Strain into a clean and sterile airtight container, glass jar, or syrup dispenser.

    Tips

    • Just like with fruit-infused syrup, you can play with flavor options by using a different type of sugar. Maple syrup, coconut sugar, or honey can slightly alter the final product.
    • Bottle up this delicious syrup and use it as a holiday gift.
    • For a thicker cinnamon syrup, use a 2:1 sugar-to-water ratio.

    Serving Suggestions

If you are a cinnamon lover, here are a few ideas for using this simple syrup recipe!

    • Cinnamon dolce syrup - Make your own dolce latte! Add a ¼ cup of coconut sugar (or brown sugar) and use 1 teaspoon vanilla extract.
    • Hot toddy, egg nog , or hot chocolate - add a bit of some cinnamon spice!
    • French Toast, oatmeal - drizzle a little of this on top instead of maple syrup.
    • Cookies, quick bread, and ice cream - use as a glaze or topping.
    • Cocktails - flavored simple syrup can transform a classic cocktail for fall and winter.
