Sweet potato avocado toast - For a fun twist on avocado toast, use avocado slices or mashed avocado on your potato toast. Garnish with some everything bagel seasoning or vegan parmesan for a truly delicious savory option.
Sweet potato toast with berries and yogurt - Use dairy-free or regular yogurt and garnish with strawberries, raspberries, or blueberries. Plain or vanilla yogurt complements fresh berries well, but mix it up and use flavored yogurt if you wish.
Peanut butter and banana sweet potato toast - A slather of creamy peanut butter and slices of banana pair well with the natural sweetness of the veggie toast.

Other great toppings include chia seeds, hemp seeds, cashew butter, vegan Nutella, flaxseeds, a drizzle of honey or maple syrup, or even cream cheese.

Before you start: Preheat oven to 400 degrees Fahrenheit. Line a large baking sheet with parchment paper.
Step 1: Carefully slice the sweet potato lengthwise into about ½ inch slices. Place slices in a single layer on the prepared baking sheet. If using an oil, use a pastry brush to lightly brush on top of the raw slices.
Step 2: Bake for 20 minutes. Test for crispy edges and doneness by piercing the flesh of the tender thin slices with a fork. Top with preferred toppings and serve immediately.
Helpful tips
- For best results, a mandolin slicer is great for making thin even slices. A large sharp knife can be used as well.
