Canned sweet potato puree - Make sure you use real sweet potato puree. You can also cook your own sweet potatoes to make homemade sweet potato puree.
Canned pumpkin makes a great substitute and transforms these into vegan pumpkin pancakes!
Non-dairy milk - Unsweetened almond milk, coconut milk, soy milk, or another plant milk can be used here.
Apple cider vinegar - When added to the milk, this will create dairy-free buttermilk.
Gluten-free oats - If you are Celiac or gluten-intolerant, ensure that you use certified gluten-free rolled oats to make your own oat flour.
Do note that store-bought oat flour is more of a fine flour texture than homemade. The best way to measure is by weight with is kitchen scale.

White rice flour - This starchy gluten-free flour will help bind our gluten-free vegan pancakes without gums.
Vegan butter - This adds a buttery flavor and fat to our recipe. Coconut oil can be substituted or regular butter if dairy is not an issue.
Maple syrup - The natural sweetness of pure maple syrup adds flavor and a touch of sweet to these healthy sweet potato pancakes.
Ground cinnamon, ginger, and cloves - These warming spices pair so well with the sweet potato flavor.
Step-by-step instructions
Before you start: Combine almond milk and apple cider vinegar in a measuring glass and set aside.
Step 1: Add dry ingredients—oats, white rice flour, baking powder, salt, cinnamon, ginger, and cloves—to a food processor.
Step 2: Process until oats are more of a flour consistency.
Add the wet ingredients—maple syrup, sweet potato, vanilla extract, melted vegan butter, and almond milk—to the mixture.
Step 3: Process until all ingredients are incorporated. Allow batter to sit for 3-4 minutes.
Step 4: Heat a non-stick pan over medium heat. Use a ¼ measuring cup to pour batter onto pan.
Flip pancakes once edges have set and bubbles appear on top. Cooked pancakes should be golden brown. Repeat until all of the batter has been used.
Tips
- For best results, let the pancake batter rest for 3-4 minutes before cooking to allow the flours to absorb so of the liquid and thicken.
- If you don't have a food processor, you can also make this sweet potato pancake recipe in a high speed blender. Alternatively, if you don't have either, you can use store-bought gluten-free oat flour and whisk ingredients together in a large bowl.
- This is a great recipe to use leftover sweet potatoes or leftover sweet potato mash!

hello! any luck these can be made in bulk and frozen? will they be as good once thawed and heated?

Hi! I haven't frozen these pancakes, but I do think they would freeze ok. Once thawed and reheated the texture might be a bit softer though.

I can't eat rice at all, so what do you think might substitute for it? I can eat most gluten free flours, i.e.sorghum, millet, tapioca, buckwheat, etc. Thank you!

Hi Alene! Great question. I actually think in this recipe you could replace the rice flour with an additional 1/2 cup of oats! I do think tapioca starch would work well too, but I would use a little less so it doesn't get too gummy.
