Ingredients and substitutions
Here are a few quick notes about the main ingredients in this recipe. You can see a complete list of ingredients and instructions in the recipe card below.
Quinoa - High in plant-based protein, vitamins and minerals, and fiber, the health benefits of this little gluten-free seed are many. The pseudo-cereal is considered a complete protein because it contains all nine amino acids.
It is a great gluten-free pantry staple and can easily replace gluten-containing grains. Dry white quinoa is what I use, but tricolor, rainbow, or red quinoa works great too.
Unsweetened almond milk - Any non-dairy milk will work in this recipe. Unsweetened coconut milk will add additional richness and creaminess. But choose the plant milk you have on hand. Regular cow's milk can be used as well.
Vanilla extract - Using vanilla is a wonderful way to add sweetness without extra sugar. Pure vanilla extract will give you the best flavor.
Ground cinnamon - This pantry staple adds warmth, sweetness, as well as health benefits. The antioxidant and anti-inflammatory properties of cinnamon make it an excellent addition to a nutritious porridge.
Maple syrup - Just a bit of maple syrup sweetens the porridge without refined sugar.
Ingredient note
Quinoa contains phytic acid which can make it difficult to digest as well as absorb all its nutrients. Soaking quinoa overnight helps remove the phytic acid as well as the saponin natural coating. Instead of soaking, rinse quinoa before use to remove the saponin and its bitter taste.
Step-by-step instructions
Before you start: Rinse uncooked seeds in a fine-mesh strainer.
Step 1: Add rinsed quinoa to a medium saucepan on the stovetop. Add the rest of the ingredients to the saucepan and bring to a boil over medium heat.
Step 2: When the mixture starts to boil, turn the heat to low, cover with a lid, and simmer for 15 minutes. For a creamier porridge, add a little bit of extra milk.
Helpful tip
Like homemade instant oats packets, this delicious porridge is perfect for meal prep.
Suggested toppings
Similar to oatmeal or overnight oats, you can easily customize this porridge breakfast bowl with your favorite toppings.
An extra drizzle of maple syrup, fresh fruit, chopped nuts, chia seeds, hemp seeds, seed or nut butter for added healthy fats, or homemade fruit compote are all delicious ways to elevate this basic recipe.
FAQs
Rinsing quinoa is important to remove bitter-tasting saponins and improve its overall flavor. Removing the saponins also aids in digesting it and prevents gut issues.
Leftover porridge can be stored in the refrigerator for 3-4 days when stored in an airtight container.
Quinoa is often referred to as a "superfood" due to its high nutritional content. This includes a good balance of essential amino acids, vitamins, and minerals, making it a nutrient-dense and protein-rich grain.
